It’s official we have moved into our newest space at Gateway Plaza, making us an HQ family of four! With a modern office space feel, this location is unique in the fact that it has not only FREE parking and our largest available office suites, but it also has direct access to a number of local businesses that make any working day a little bit better. Today we are going to share with you our neighbor Union Special Bread.
Who is Union Special?
Officially, they are full service bakeshop and café located at 2409 Crabtree Blvd. This team, however, is so much more than your average bake shop. They source their products 100% locally, All the flours we use are currently sourced exclusively from Lindley Mills in Graham, NC. So not only do they make mouthwatering bread and pastries, but they put heart into their mission daily.
This Raleigh hotspot was founded by Andrew Ullom, who was previously the executive pastry chef of Ashley Christensen’s restaurants. He has quite a talent for making tasty treats and kept Raleigh on its’ toes waiting for his own solo store for months! Thankfully, our dreams came true and HQ Raleigh was lucky enough to land a spot as his talented teams neighbor.
What do they Do?
Union Special is mastering the art of creating naturally-leavened bread fresh every single day. They are using this special formula to serve the raleigh community breakfast and lunch on Tuesday – Friday from 7:30am – 3:00pm and brunch on Saturday – Sunday, 8:00am – 3:00pm. They task themselves with stepping outside the box and making bread that tastes like home. Their passion and unique is painted in every aspect of their business.
“Our sourdough bread is made using a single, whole wheat natural sponge, and we’ve settled on this style of preferment to take advantage of strong fermentation and subtle flavor development. Our flours are all high in mineral content, and our blends of sifted and whole grain flours help develop a thin, deeply rich crust and a soft, airy interior.”
What Can I Get To Eat?
Almost everything you buy here is made from scratch and tested by none other than you! For the most part the café menu is a revolving and evolving selection of grain and vegetable forward sandwiches and salads. They also offer hand-made mouth-watering cookies that are a go-to midafternoon snack! If you need proof of their talent make sure to stop by our HQ@Warehouse neighbor, Videri for a chocolate croissant. Outside of their own creations you can find products from other local vendors such as, Slingshot Coffee, Benny T’s Vesta Dry Hot Sauce, and Jeddah’s Tea. Needless to say they have something for everyone.

This team is built off a dream to make what we eat better and local. Everything that goes into making the bread, pastries, cookies, and other products is purchased with the mission to help build up our local businesses. Andrew Ullom grew up the son of scientists in Ohio and initially set off on that path himself as a biochemistry major in college. It turned out he liked science more than school. After dropping out and chasing his dream to bring science to baking, he landed here. They have already proven to be supportive neighbors and we can not wait to watch this crew grow, in addition to fueling our community daily!
